Happy Independence Day! Gardening season is in full swing and you might have extra produce. There are plenty of ways to save your extra produce by canning, freezing, or even donating to ECH. Our residents LOVE having fresh produce for meals. One of my favorite ways to use left over tomatoes is to make homemade salsa! Here’s a recipe: 10 cups of peeled, chopped, and drained tomatoes, 3 cups chopped onion, 1.5 cups chopped green pepper, 4 jalapenos finely chopped, 5 cloves of garlic minced, 2 teaspoons ground cumin, 2 teaspoons ground pepper, 2 tablespoons canning salt, 1/3 cup cilantro, 1/3 cup sugar, 1 cup apple cider vinegar, 16 oz tomato sauce, 12 oz tomato paste. Combine all ingredients, bring to a boil, and let simmer for 10 minutes. Fill your canning jars and add the seal and lid, and leave them in a steam bath for 15 minutes. Remove the jars and allow to cool to room temperature. Be sure to check the seals!
